During my time consulting with NightOwl, I partnered with the team to develop bakery and dessert specials that were both brand aligned and operationally realistic. I developed 25+ seasonal recipes, testing and refining each item for consistency, scalability, and quality. To support smooth execution, I produced standardized recipe cards, complete with photos, step by step instructions, and formulas for multiple batch sizes. I led hands-on staff training for every recipe so the team could reproduce results accurately in daily service.

Creativity was a defining part of my work with NightOwl Cookies, where the brand identity centers on bold, trend driven flavors and eye catching designs. I helped develop concepts that pushed beyond traditional cookie profiles, experimenting with unexpected ingredients and textures like cheese, bacon, popping candy, and boba to create products that felt fresh and distinctive. We also prioritized fast turnaround on limited time releases tied to viral cultural moments and trending shows, movies, or artists. One example is the 4/20 inspired cookie box (pictured above) created for April 20th, one of the bakery’s busiest days, designed to be visually thematic, on brand, and built to drive excitement and high volume sales.

Standardization and documentation were a major focus of my work at Night Owl Cookies. For every recipe I developed, I created production ready recipe cards that included clear step by step instructions, process photos, and formulas that could be scaled across multiple batch sizes. I weighed ingredients down to the nearest 0.10 gram to eliminate ambiguity and ensure the recipes stayed accurate and consistent when scaled to produce thousands of units. This level of precision helped the team maintain the same flavor, texture, and visual finish from small test batches through full volume production.

Staff training and rollout were a core part of my consulting work at Night Owl Cookies. For each new recipe, I led hands on training sessions that walked the team through the full process, prep, mixing, portioning, bake parameters, finishing, and final presentation, so execution was consistent from person to person and shift to shift. I emphasized key visual cues and checkpoints (texture, spread, color, doneness, and garnish placement) and addressed common pitfalls in real time to prevent variability at scale. By pairing clear documentation with practical, in kitchen coaching, I helped the team confidently produce new items in daily service while maintaining quality and speed.
